Scuola del Vino, in cooperation with wine professional Tyler Dawson, APCI Canada and Glowbal Restaurant Group, has been established to celebrate and advance the appreciation for Italian wine – past, present and future – through a range of wine courses meant for passionate consumers and trade professionals. Our approach to learning is experiential! We emphasize tasting a diverse range of wines, guided by wine professional Tyler Dawson, who provides his unique on-the-ground perspectives within historical, cultural and cuisine contexts. Italy sparkles with all manner of bubbly wines. Red, white and rosé, dry to sweet, a lively tickle all the way to the pearls of the Champagne Method and everything in between.
Italy boasts an exotic and diverse range of sparkling wine styles to suit any occasion, in a range of methods, varietals, colours and price points.
We will explore the broad range of styles and varietals, and methods of production, which are revealed in wines we will taste during the seminar. These include:

Italy blushes with an embarrassment of Rosato – Italian rosé. There are almost 250 appellations in Italy that are entitled to produce pink wines. This doesn’t include sparkling or dessert wine styles, nor does it include the coppery Ramato Pinot Grigio, a traditional wine style popularized during the time of the Republic of Venice.
Italy thinks and drinks pink in almost every wine-producing corner of the country. Each province boasts a diverse range of pink wine styles, with a multitude of varietals, colours and hues.
We will sample a range of styles, varietals, methods of production, and explore and discuss the versatility of Rosato in a cuisine context.

Tyler Dawson is a Vancouver-based wine professional who boasts a 30-year passionate affair with wine. His knowledge and unique perspective are a result of his experiential learning – at home and in wine regions around the globe. Tyler has been in fine wine retail management and a buyer for nearly 24 years; he has launched two intimate wine schools, developing and delivering curriculum for each; and is continuously involved in hospitality including a Sommelier consultant role with award winning La Quercia restaurant and L’ufficio wine bar. Tyler continues to “enotain” guests there with his surprise-and-delight Vivace tasting flights.
Tyler’s affection for Italian wine began decades ago. His generous knowledge and insights from mission-focused buying trips to regions in Italy, as well as regularly attending Vinitaly, continue to advance his unique perspective and enthusiasm. Tyler presents educational seminars to media and trade on behalf of Italian wine consortiums, and continues to share his passion for Italian wine and its regions through guided tours around the old country.
It is Tyler’s experience over 30 years and deep knowledge of the wine universe his incredible palate and narrative skills, and his affection towards Italy and Italian viticultural heritage, that provide value to those who attend his Italian wine courses.
