On the occasion of the Week of the Italian Cuisine in the World, the Italian Chamber of Commerce in Canada – West, in collaboration with the Consulate General of Italy in Vancouver, APCI – Association of Professional Italian Chef, VCC-Vancouver Community College, and Il Centro – Italian Cultural Centre is organizing a complimentary cooking masterclass for Culinary professionals and students, Canadian food importers, and the hospitality reps.
Hosted at Vancouver Community College – Culinary Department, during this unique occasion,  Chef Luca Malacrida (Captain Chef of the National(Italy) APCI Team), Chef Giorgio Perin (Coach Chef of the National(Italy) APCI Team), in collaboration by Chef Pino Posteraro (World Top 50 Italian Chef) will share the secrets to cooking the perfect pasta and much more.

MAIN TOPICS:
  • Fresh stuffed pasta: meat ravioli
  • Pasta: the value of the drawn in bronze and the resistance of the texture in the cooking process
  • Pairing of EVOO to a selection of meat, vegetables and meat dishes
